Vegetarianism in Buddhism...Recipes to share vegetarian meals
Hello, I just had a thought about eating healthier. If anyone has good vegetarian recipes I thought we could post them to this thread and we could try them out! They wouldn’t necessarily have to be elaborate meals, they can be as simple or as complex as you would care to make them. I will go first.
Rice Salad
one cup rice. olive oil
two cups water lemon juice
1/2 cup pitted green olives chopped. salt and pepper to taste
1/2 cup pitted black olives chopped 1/3 cup parsley finely chopped
one cup cherry tomatoes
Place rice in saucepan with one tablespoon oil, salt and pepper and stir well. Add water, cover and bring to a rapid boil. Lower the heat and cook the rice slowly for about twenty minutes, until all the water is absorbed.
When the rice is tender, allow it to cool in the refrigerator for one hour.
Mix the rice and the olives in a large bowl. Add olive oil, lemon juice, cherry tomatoes and salt and pepper to taste; mix well. Sprinkle parsley on top and serve the salad cold.
